HOW TO MAKE ORANGE FROSTING
I prefer using fresh oranges when making this frosting. If oranges aren't in season, you can make orange flavored frosting by using orange extract.Begin by zesting two oranges.
Next juice the oranges. You don't have to use fresh orange juice. But if you're zesting oranges, you might as well use their juices.
You will need 1-2 Tbsp of juice. Depending on the size of your oranges, the juice from one orange may be plenty.
I like to use a little strainer to catch any seeds and pulp.
Set the juice and zest aside. We'll add them to the frosting later.
When making frosting, it's very important to start with softened cream cheese and butter.
I usually set it out for an hour or more on the counter to soften. I do this to prevent lumpy frosting.
If I'm in a rush, I'll pop it in the microwave for a few seconds.
Cream cheese is better suited to microwave softening than butter is.
Butter melts very quickly, so I try not to use the microwave if I can help it. Way too often, I end up with butter puddles instead of softened butter.
In a medium sized bowl, add the softened cream cheese and butter.
With a hand mixer on medium speed, mix until creamy.
Add 2 cups powdered sugar, 1 Tbsp orange juice and the fresh orange zest.
To avoid a cloud of powdered sugar, mix on low speed until incorporated.
Scrape the sides of the bowl as you mix.
Mix to combine, adding an additional cup of powdered sugar once the first 2 cups have been incorporated.
Add an extra tablespoon of orange juice if needed to reach a spreadable frosting consistency.
Store the frosting in the fridge until ready to use.
Leftover frosting can be stored in an airtight container in the fridge.
