HOMEMADE TWIX BITES (EASY 3-INGREDIENT TREAT!)
I first tried these at a neighborhood cookie exchange. Nilla wafers + a Rolo + chocolate = a mini Twix. I thought it was genius. The ones I tried were dipped completely in chocolate. So the chocolate to cookie to caramel ration was a little bit off balance. Not only was the cookie dipped in chocolate, but the Rolo is also coated in chocolate. The caramel layer was overpowered.
I decided to drizzle chocolate on top instead of coating the whole cookie. This not only restores the balance, but they're also much easier to make.
This homemade version tastes pretty darn close to real Twix candy bars.
I also have a homemade Twix bars recipe if you'd like to try it. Or try these Rolo Cookies.

HOW TO MAKE 3-INGREDIENT HOMEMADE TWIX BITES
These mini Twix bites are so easy to make and take just 5-10 minutes.I'm not sure this really qualifies as a recipe. More of a "how to assemble" a homemade candy bar.
Begin by preheating the oven to 300 degrees.
Layout the mini Nilla wafers on a baking sheet. I lay them with the round side down and the flat side facing up.
I lined the sheet with parchment paper. This makes for easy cleanup, but is not necessary.
Next unwrap the Rolos and place one on each wafer.
Place in the oven for 90 seconds, or until the chocolate begins to melt. It will look glossy like it does in the bottom half of the above picture.
Place a mini Nilla wafer on top of each rolo and press down just slightly.
Don't press too hard, you don't want the Rolo to squeeze out.
Next, melt the chocolate chips. You don't need a lot. I did 1/4 cup. I could have lightly drizzled about twice as many as I did.
Place the chocolate in a microwave-safe bowl. I microwaved for 40 seconds, stirring at 10 second intervals. It could take more or less time with your microwave.
Place the chocolate in a zip top bag. Cut a tiny bit off the corner of the bag and squeeze out the melted chocolate onto the cookies.
That's it! Just allow the chocolate to cool completely.
Enjoy this crispy cookie with chocolate and a caramel center.
Store in an airtight container at room temperature.
These are the perfect bite-sized treat for parties and celebrations.
