This is my favorite soup for the soup season. It is warm and filling. AND it's so quick and easy.It's the perfect easy sausage gnocchi soup for busy weeknights. But it's a quality invite-a-guest-to-dinner type of meal. Especially when paired with my favorite garlic bread twists!

INGREDIENTS NEEDED FOR CREAMY ITALIAN SAUSAGE GNOCCHI SOUP
Below are the ingredients needed for this Italian sausage gnocchi soup with spinach.- Italian sausage (I use mild)
- olive oil
- butter
- flour
- onion
- fresh garlic
- chicken broth (low sodium broth or vegetable broth is fine)
- milk
- carrots
- parsley
- salt and pepper
- potato gnocchi
- fresh spinach (I always get baby spinach)
- chicken bouillon
- cornstarch
ITALIAN SAUSAGE
Italian sausage is a pork sausage. There are two main flavor types: hot Italian sausage and mild Italian sausage. I use mild, but you can use spicy sausage if you prefer.You can substitute chicken if you'd like chicken gnocchi soup.

I use store-bought gnocchi. There are two common types of gnocchi at the typical grocery store. The dried gnocchi that can be found in the pasta aisle. And the refrigerated gnocchi found in the refrigerated section of the store.I have used both kinds and they both work well for this recipe.
If you want to make homemade gnocchi you can do that as well.
HOW TO MAKE ONE-POT SAUSAGE GNOCCHI SOUP
Making this tasty soup is quick and easy.Begin by browning your sausage in a large pot. I just cook it as I do ground beef, breaking it into chunks as it cooks.
Remove this, cover it to keep warm and set aside.
This time, I cooked the sausage in a separate pan. BUT, you get more flavor when you cook it right in the pot you make the soup in. Just remove the ground sausage into a bowl for this next step.
Add the butter to the pot with a bit of olive oil and begin to melt over medium heat.
Add the onions, carrots and garlic. Cook over medium-high heat in the butter and oil for about 5 minutes or until the onions become translucent.

Add the flour to the pot and stir to combine. Cook for 1 minute over medium-low heat.
Add the chicken stock, 2 cups water, bouillon, milk and parsley to the pot.
Bring the broth to a boil.
Add the cooked sausage back to the pot as well as the gnocchi. Bring the soup back to a boil until the gnocchi begins to float.
Stir together the cornstarch and water to create a thickener. Add to the soup and boil 2-3 minutes until thickened. I start with 2 tablespoons of each water and cornstarch. Sometimes I will add another tablespoon of each if it is not thickened to my liking.
Add in the spinach and cook just until it wilts.
Season with salt and pepper and serve.
