So each year I like to try a few new raspberry recipes. These raspberry sweet rolls are SOOO good with the raspberry filling and raspberry cream cheese frosting.
Today let's dive into this classic raspberry crisp recipe.

INGREDIENTS NEEDED FOR EASY RASPBERRY CRISP
- raspberries
- sugar
- cornstarch
- almond extract
- water
- quick oats
- brown sugar
- flour
- cold butter
- salt
- cinnamon
RASPBERRIES
I used fresh raspberries for this recipe. But you can also substitute frozen raspberries. You can also substitute blackberries or blueberries in this recipe. Or a combination of berries.Because berries require so little prep work, they make easy fruit crisps.
OATS
I prefer using quick cooking oats for the crumble topping.HELPFUL KITCHEN TOOLS
- pastry blender (sometimes called a pastry cutter)
- 9X9 baking dish (my favorite!)
HOW TO MAKE RASPBERRY CRISP
Let's get started!Begin with 4 cups of raspberries. This is about 18 oz.
Add the 4 cups of raspberries to a mixing bowl. Add 1/3 cup sugar, 1 Tbsp cornstarch, 1 tsp almond extract and 1 1/2 Tbsp water.
Mix just until berries are coated.
Spread the raspberry mixture over the bottom of a greased 9X9 baking pan.
In a large bowl add the topping ingredients. Combine 1 cup of quick oats, 3/4 cup brown sugar, 1 cup flour, 3/4 cup cold butter, 1/4 tsp salt and 1 tsp cinnamon.
Cut the butter into the dry ingredients using a pastry blender until mixture resembles coarse crumbs. Then use your hands to create the crispy topping.
Now spread the oat mixture over the raspberries.
Lastly, bake at 375 for 40 minutes or until the crisp topping turns golden brown.
That's it! Told you it was an easy recipe.
Enjoy it plain, or serve with a dollop of whipped cream or a big scoop of vanilla ice cream.
