INGREDIENTS NEEDED FOR RASPBERRY STUFFED FRENCH TOAST
- French bread
- raspberries
- greek yogurt
- sugar
- eggs
- maple syrup
You can try a variety of fresh fruits in place of the raspberries. Strawberries, blackberries, or peaches are all yummy. For strawberries or peaches, chop into small pieces instead of smashing.
Frozen raspberries can also be used. Allow the berries to thaw and drain any juice to prevent the filling from becoming to liquidy.
You could also try raspberry jam instead of fresh raspberries.
Cream cheese can be used in place of the greek yogurt. Allow the cream cheese to soften to room temperature so it is soft and creamy before making the filling. This will give it more of a raspberry cheesecake taste.
Bread alternatives include Texas toast or regular bread slices. If bread slices are thin, make a sandwich with the filling inside.
HOW TO MAKE RASPBERRY STUFFED FRENCH TOAST
This recipe is super simple, with just a handful of ingredients. But it tastes amazing! It's the perfect fancy breakfast.Smash the raspberries in a small bowl.
Add sugar and yogurt to the raspberry puree and mix to combine. I love the creamy texture with little bits of raspberry.
Cut a 2 inch slice of french bread. Then cut it in the middle almost all the way through, leaving the bottom attached.
Add a few scoops of raspberry filling.
In a shallow dish, whisk the eggs. Heat a skillet over medium heat. Spray with cooking spray or melt butter (just a dab) to prevent sticking.
If making for a large group, use a large skillet and you can cook several at a time.
Dip the bread in the egg mixture. Then cook on each side 1-2 minutes until golden brown.
Top with fresh berries and serve with a little maple syrup. Serve warm.
It would also be yummy to top your stuffed French toast with whipped cream.

Raspberry Stuffed French Toast

Delicious french toast stuffed with sweetened greek yogurt and mashed raspberries. Top with fresh raspberries and serve with maple syrup.
Ingredients
- 1/2 loaf of French bread
- 1 cup raspberries, mashed, plus extra for topping
- 1 cup greek yogurt
- 2 Tbsp. sugar
- 3 eggs, beaten
- maple syrup
Instructions
- Crack and beat the eggs in a bowl.
- Smash the raspberries with a fork in a small bowl. Be sure to leave some for garnish.
- Add the yogurt and the sugar and mix to combine.
- Slice the French bread into 2 inch pieces. Slice each piece nearly in half, leaving the bottom attached.
- Add 2-3 tablespoons of the raspberry mixture into the middle of the cut bread.
- Dip the both sides of the bread in the egg.
- Cook on medium high heat for 1-2 minutes on each side, or until golden brown.
- Top with raspberries and maple syrup.
Notes
Additional toppings include whipped cream or more Greek yogurt.
