These cream cheese pumpkin muffins are so tender and moist. They make a quick afternoon snack, or a delicious fall breakfast.
PUMPKIN CREAM CHEESE MUFFINS RECIPE
In the past I've shared my pumpkin chocolate chip muffins recipe. (You can make pumpkin bread with it too!) That pumpkin recipe results in a sturdier muffin. It can be easily transported in a school lunch without getting too mangled. This recipe creates tender pumpkin muffins. They almost melt in your mouth when you eat them. They are a little more "smashable", so take care when storing or transporting them.
A funny little side note.
My kids are often picky and don't enjoy the yummy things in life. Because of that I made some of these muffins without adding the cream cheese because I thought some of them would prefer it that way.
They all said, "why wouldn't you want cream cheese in them?"
They did end up eating the plain muffins, but not until all the cream cheese ones were gone.
INGREDIENTS NEEDED FOR PUMPKIN MUFFINS RECIPE
- brown sugar
- sugar
- vegetable oil
- can of pumpkin puree
- eggs
- vanilla extract
- all purpose flour
- baking soda
- salt
- cinnamon
- nutmeg
- ginger
- cloves
- chocolate chips
- cream cheese, softened
- Be sure to use pure pumpkin puree, NOT pumpkin pie filling.
- You can use 1 tbsp pumpkin pie spice in place of the cinnamon, nutmeg, ginger and cloves.

HOW TO MAKE PUMPKIN MUFFIN BATTER
The pumpkin muffin batter is easy to make. You simply need a large bowl and a whisk.In a large mixing bowl, begin by combining the wet ingredients. This includes the brown sugar, sugar, vegetable oil, pumpkin, eggs and vanilla.
Next add the dry ingredients (flour, baking soda, salt, cinnamon, nutmeg, ginger and cloves). Mix just until combined.
Add chocolate chips and stir until evenly dispersed throughout the batter.
Set aside while you make the cream cheese filling.
HOW TO MAKE CREAM CHEESE FILLING
The most important part of the cream cheese filling is to make sure that the cream cheese is softened.You can do this in two ways.
You can set the cream cheese out on the counter to sit at room temperature for about an hour.
If you've forgotten to plan ahead, simply place it in the microwave until softened. This usually takes between 30-60 seconds, depending on your microwave settings.
To make the cream cheese mixture, mix the cream cheese with a hand mixer in a medium bowl until smooth and creamy. Add the egg yolk, sugar and vanilla and mix until combined.
ASSEMBLING THE DELICIOUS PUMPKIN CREAM CHEESE MUFFINS
Line a muffin tin with paper liners. Spray liners with cooking spray.
Add a scoop of pumpkin batter to each muffin cup using a cookie scoop.
Next add a spoonful of the sweet cream cheese filling to the top of each muffin. Swirl with a toothpick.
Bake at 375 for 20 minutes, or until toothpick comes out clean.
I enjoy warm pumpkin muffins right from the oven. They're so yummy!
HOW TO STORE HOMEMADE PUMPKIN CHEESECAKE MUFFINS
Store pumpkin muffins in single layer in an airtight container. Add a paper towel under and over them to soak up any moisture. They can be stored at room temperature.
HOW TO FREEZE PUMPKIN MUFFINS
Place muffins in a single layer in a freezer bag and freeze. To thaw, simply remove from the freezer and set on the counter for an hour or so.
