This tomato tortellini soup recipe is a grown up twist on classic tomato soup.
This hearty soup is so tasty. The flavor-making ingredients include, Italian sausage, green peppers, Italian dressing mix and of course tomato.
It's packed with tomato flavor because it has 4 different tomato ingredients: diced tomatoes, tomato sauce, tomato paste and a can of creamy tomato soup.
Then of course we add the cheese-filled pasta - the tortellini. It makes this soup one of a kind.
TOMATO TORTELLINI SOUP
This easy tortellini soup is a great recipe that the entire family will love. This is definitely a chunky soup, but if you're in the mood for a creamy tortellini soup, I've included brief instructions on how to achieve that.

INGREDIENTS NEEDED FOR TOMATO TORTELLINI SOUP
- mild Italian sausage
- garlic, minced
- dried onion flakes
- diced tomatoes
- tomato sauce
- tomato paste
- tomato soup
- water
- chicken bouillon
- green pepper, chopped
- carrots, grated
- green beans
- red beans, drained
- Italian seasoning dressing mix
- cheese-filled tortellini
- parmesan cheese, optional
- croutons, optional
HOW TO MAKE TOMATO TORTELLINI SOUP
In a large pot, brown the sausage over medium high heat. Add onion flakes and garlic and cook 1-2 minutes.Blend one can of tomatoes until smooth. Add the tomatoes to the pan with an additional can of diced tomatoes (not blended up).
Stir in the tomato sauce, tomato paste, tomato soup, water and bouillon. Bring to a simmer while you chop the veggies.
Add the chopped green pepper, grated carrots, green beans, red beans and Italian dressing mix and cook over medium heat until veggies are tender, about 20 minutes.
In a separate pot, cook the tortellini according to package instructions. Drain and add to soup.
Serve with parmesan cheese and croutons if desired.
Variations and adaptations:
- You can replace the water and chicken bouillon with chicken stock.
- For a creamier soup, try blending both cans of tomatoes. You could also use an immersion blender to blend up all the veggies once they are cooked. (I would add the red beans and tortellini to the soup after blending.) If blending, you could use crushed tomatoes instead of diced tomatoes if desired.
- Instead of a cheese-filled tortellini, you could try spinach tortellini. I typically use dried or frozen tortellini. However you can use fresh tortellini if desired. Just prepare according to the package instructions.
- Drizzle heavy cream just before serving for an elegant presentation.
HOW TO STORE LEFTOVER TORTELLINI SOUP
Leftovers should be refrigerated. I have found that the tortellini soaks up the liquid so the leftover soup is thicker. Thin with a little water if you prefer a thinner soup.
