HELPFUL KITCHEN TOOLS
Non-stick skillet
One thing that is vital when pan frying a breaded piece of meat is a quality non-stick skillet.For years, I couldn't figure out why my breading would never stay on the meat.
Once I got a good non-stick skillet, I realized my problem. In my old pan the breading would stick to the pan and therefore come off the meat when flipping.
The non-stick pan was the key. Once I started using it, the breading stayed on the meat producing a much tastier final result.
Tongs
Tongs are super helpful when flipping the meat. In a pinch I've used a fork, but it is hard to control and results in splattering hot oil everywhere.Baking Sheet with Wire Rack
This is helpful when making large amounts of chicken fried steak. My skillet will hold 3 pieces of meat comfortably. With six mouths to feed that means all the meat is not done at the same time.To keep the first batch warm, I place the cooked meat on a rack on a baking sheet and place it in a 275 degree oven to keep it warm until the second batch is finished.
The wire rack allows the grease to drain a bit and keeps the breading crispy by allowing airflow.
You can also use this method to keep the meat warm while finishing up the gravy or other side dishes to serve with your chicken fried steak.
HOW TO MAKE CHICKEN FRIED STEAK
To begin, gather two small mixing bowls. In one add about a cup of milk.In the other add the flour and spices and mix well.
In a non-stick large skillet add enough oil to cover the bottom of the pan. Turn on medium-high heat.
Dip the cube steak into the milk and then coat it with the seasoned flour mixture.
Once the oil is hot, fry the steak until golden brown on both sides, flipping once.
Work in batches to cook remaining steaks. Place breaded steaks on a wire rack on top of a baking sheet in a warm oven (about 275 degrees) to keep warm.
(You can place them on a paper towel-lined plate, but I feel like they get soggy quicker that way. I prefer placing them in the oven.)
TIP: You can use this same recipe and process to make fried chicken!
HOW TO MAKE COUNTRY GRAVY
This is my go-to country gravy recipe. (I'll admit, I'm not the best at homemade gravy, EXCEPT when it comes to this gravy. It the perfect peppery white gravy!)
This creamy gravy is easy to make, and much tastier than the gravy packets you can buy. We also use this recipe for biscuits and gravy or for mashed potatoes.
Melt the butter in a saucepan.
Once the butter is melted add the flour, kosher salt, black pepper and cayenne pepper. Stir and cook about 1 minutes.
Whisk in milk and bring to a boil, stirring frequently. Boil for one minute and the gravy should be thickened and ready to serve.
HOW TO REHEAT CHICKEN FRIED STEAK
There are a few ways you can reheat chicken fried steak. You can always microwave it, but the problem with that is that it likely won't be crispy.The best way I've found to re-heat it chicken fried steak is to toss it in the air fryer for a few minutes until hot and crispy.
Another option is to warm it up in the oven. If you place it on a wire rack on a baking sheet it will allow air flow and will crisp up the breading.
