BOSTON CREAM DONUT RECIPE
In college, I had a professor that would start class, ask us each what type of donut we wanted, and left us to do our work while he went and purchased donuts for us. He did this at least once a week.My pick EVERY time was a Boston cream donut. There's something about that filling that I just love.
Now, I can make that filling any time I want. I can even make the donuts to go with it 😉

HOW TO MAKE BOSTON CREAM DONUTS FROM SCRATCH
My homemade donut post will walk you through the process of making the dough in detail. PLUS it has an amazing glaze recipe. This recipe makes a lot, so you can make both glazed donuts and Boston cream donuts at the same time.MAKING THE DOUGH
Begin by making the dough. Mix together your yeast, and 1 tablespoon of sugar with warm water. Let sit for a few minutes.Meanwhile, add milk and shortening in a microwave safe container and microwave for 1-2 minutes, or until shortening has melted.
Combine 2 cups of the flour and all of the other ingredients. Mix in a stand mixer until combined. Add the remaining flour 1/2 cup at a time until the dough no longer sticks to the bowl. Not all of the flour may be needed. Knead for 5 minutes on speed 2.
Let rise until double in size.
Roll out the dough to between 1/4 and 1/2 inch thickness.
Cut out the donuts. I use a cup to cut them out.
But a donut cutter the the center removed would be an awesome tool to have. You can easily make some filled donuts as well as a regular glazed donut with the same batch of dough.
Let the donuts raise until double in size.
MAKING THE CREAM FILLING
While the donuts are rising, begin making the filling and the chocolate glaze.
Mix together the sugar, cornstarch and salt in a saucepan. Mix together the milk and the egg yolks thoroughly.
Pour the egg yolk/milk mixture gradually into the sugar mixture.
Stirring constantly, cook over medium heat until it thickens and boils. Stir one minute and remove from heat. Add vanilla and cool. Scoop into a zip top bag for piping into the donuts. Using a large round piping tip is helpful.
Once the donuts have risen, heat the oil to between 360-375 degrees. Fry in the oil until golden brown, flipping once.
Let cool enough to handle.
Insert a knife into the side of the donut. Wiggle it around a little bit to create a pocket for the filling to go.
Pipe filling into the hole.
Dip the top of the donut into the chocolate glaze.
Serve warm, or let cool to enjoy. Either way, they're delicious!

- 2 Tbsp yeast
- 1 Tbsp sugar
- 1/4 c. warm water
- 1 1/2 c. milk
- 1/3 c. shortening
- 1/2 c. sugar
- 1 tsp salt
- 2 eggs
- 5 - 6 1/2 c. flour
- oil for frying
Boston Cream Filling
- 1/3 c. sugar
- 2 Tbsp cornstarch
- 1/8 tsp salt
- 1 1/2 c. milk
- 2 egg yolks, beaten
- 2 tsp vanilla
Chocolate Glaze
- 3 Tbsp butter
- 3 oz. unsweetened baking chocolate
- 1 c. powdered sugar
- 1 tsp vanilla
- 2 Tbsp hot water, as needed
Instructions
Donuts
- Combine yeast, 1 Tbsp sugar and water. Let sit for about 5 minutes until nice and bubbly.
- In a liquid measuring cup, add the milk and shortening. Microwave for 1-2 minutes, or until shortening has melted.
- Mix together 3 cups of flour, sugar, salt, eggs, yeast mixture and milk mixture in a stand mixer. Stir with a dough hook until combined.
- Add remaining flour, 1/2 cup at a time, while mixing until dough no longer sticks to the bowl. (You may not need all of the flour)
- Knead at speed 2 for 5 minutes.
- Cover and let rise 1-2 hours or until double in size.
- Roll out the dough to between 1/4 and 1/2 inch thickness.
- Cut out the donuts and place on a greased baking sheet.
- Let rise until double in size (about an hour).
- Heat oil to between 360-375 degrees. While oil is heating up make the glaze.
- Cook the donuts in the oil until browned on each side. Let cool a few minutes.
- Insert a knife into the side of the donut. Wiggle it around a bit to enlarge the pocket inside.
- Pipe cream filling into the donut.
- Dip the top of the donut into the chocolate glaze.
- Serve warm, or let cool to enjoy.
