One of my favorite breakfast foods is french toast, especially stuffed french toast. This peaches and cream version is TO-DIE-FOR! It's filled with creamy sweetened yogurt and juicy, fresh peaches.
My absolute favorite fall fruit is peaches. I've got several peach recipes already like no-bake peach dessert, peach tart, and peach cobbler.
But this year I'm going to be adding a lot more peach recipes, beginning with this easy peach stuffed french toast recipe. Peach crisp, peach pie with a graham cracker crust, peach freezer jam and peach pie filling are coming soon.
PEACH FRENCH TOAST
As fancy as it sounds, stuffed french toast is actually pretty quick easy to make. So grab a loaf of french bread so you can enjoy it too! INGREDIENTS NEEDED FOR STUFFED FRENCH TOAST
- french bread
- vanilla greek yogurt
- sugar (optional)
- peaches
- egg
- milk

HOW TO MAKE PEACH FRENCH TOAST
Scroll to the end for a printable version of the recipe, but I'll walk you through the steps. Feel free to adjust the recipe as needed to feed more or less people. I've been know to make one just for me at lunch time.
- The first thing you need is a loaf of french bread. I like to cut the bread into about 2 inch slices.
- Next, you'll cut each of those slices in half, but not all the way through.
- Mix together the yogurt and sugar in a small bowl. I like the thicker consistency of greek yogurt, but you can use regular yogurt as well.
- Mix together the eggs and a splash of milk in another small bowl.
- Dice the peaches.
- Fill your bread with a few tablespoons of yogurt, diced peaches and top with a bit more yogurt
- Dip both sides of the bread into the egg mixture.
- Cook on a skillet over medium high heat for 2-3 minutes on each side, or until golden brown
- Serve with more diced peaches and maple syrup.

Ingredients
- 1 loaf french bread
- 4-5 large peaches, diced
- 3/4 - 1 cup greek yogurt
- 3 T. sugar
- 3 eggs
- 1 T. milk
- maple syrup
Instructions
- Slice french bread into two inch slices. Then slice each piece in half again, being sure not to cut all the way through to the bottom.
- Mix together the yogurt with the sugar in a small bowl
- Mix together the eggs and milk in another small bowl.
- Fill each slice of bread with a few tablespoons of yogurt, then add diced peaches and another tablespoon of yogurt.
- Dip both sides of the bread into the egg mixture.
- Cook in a skillet over medium high heat for 2-3 minutes on each side, or until golden brown.
- Serve topped with more fresh peaches and maple syrup.
Notes:
Sugar may be omitted if desired. Regular yogurt may be substituted for greek yogurt.
