My latest endeavor in muffin making was applesauce donut muffins. These were delicious and the recipe made plenty for breakfast with leftovers to pop in the kids lunches.
They muffin itself is not overly sweet. The batter includes applesauce and just a hint of cinnamon and nutmeg. Before completely cool they are dipped in a donut glaze. Needless to say, my sweet tooth was satisfied.

- applesauce
- oil
- sugar
- brown sugar
- eggs
- baking powder
- baking soda
- nutmeg
- cinnamon
- salt
- vanilla
- flour
- milk
- powdered sugar
- butter
- hot water

HOW TO MAKE GLAZED DONUT MUFFINS
Process for baking muffins (Avoid overmixing)
- Combine the fats and sugars.
- Stir in eggs and flavorings (vanilla)
- Mix in half of the dry ingredients
- Mix in half of the wet ingredients
- Mix remaining dry ingredients
- Mix in remaining wet ingredients.
- The applesauce in this recipe replaces some of the fat, so it is added at the beginning with the oil and sugars.
- Dry ingredients include flour, leavening agents like baking soda and baking powder, salt and spices. You can mix these all up in a separate bowl first.
- Wet ingredients would include milk, buttermilk or yogurt. (milk is what we use in this recipe)
- When mixing, mix only until JUST combined.
- For this recipe, I found that using a mixer is the easiest way to mix the batter.
Once the batter is made, it's time to bake.
- Line muffin tins with paper liners for easier cleanup.
- Spray with cooking spray to prevent sticking.
- Add muffin batter between 1/2 and 3/4 full.
- Bake at 425 for 13-15 minutes.
- While the muffins are baking, prepare the glaze
- Allow to cool enough to handle.
- Then dip each muffin top in the glaze.

Applesauce muffins with a donut glaze are delicious cross between a muffin and a donut.
ingredients:
Muffins
- 1/2 c. applesauce
- 2/3 c. vegetable oil
- 1 c. sugar
- 2/3 c. brown sugar
- 4 eggs
- 1 T. vanilla
- 3 t. baking powder
- 1/2 t. baking soda
- 1 t. nutmeg
- 1 1/2 t. cinnamon
- 1 1/2 t. salt
- 5 1/2 c. flour
- 2 c. milk
Glaze
- 3 T. butter, melted
- 1 1/2 c. powdered sugar
- 1 t. vanilla
- 2-3 T. very hot water

How to cook Applesauce Donut Muffins
Muffins
- Combine applesauce, oil and sugars in a large bowl.
- Stir in eggs and vanilla.
- Add half of the flour, and the full amount of baking powder, baking soda, nutmeg, cinnamon and salt. Mix just until combined.
- Add half of the milk, mixing just until combined.
- Add remaining half of flour and mix.
- Add the last of the milk and mix.
- Do NOT over mix - mix just until ingredients are incorporated.
- Pour into lined and greased muffin tins filling between 1/2 and 3/4 full.
- Bake at 425 for 13-15 minutes.
- Allow to cool until enough to handle.
- Dip the tops of the mufffins into the glaze.
Glaze
- Add powdered sugar and vanilla to butter. Mix.
- Add hot water to sugar mixture. Start with 2 tablespoons. Add more to thin if needed.
NOTES:
Mix just until ingredients are combined. Do not overmix.
An electric mixer is my preferred method of mixing.
