Here's the thing. Most cakes that are served at birthdays or large gatherings are dry, crumbly and the only part that's good is the frosting. And even the frosting fails me sometimes.
Now you may be wondering, why do you have a page all about cake then? There are a few exceptions to my "I don't like cake" statement. The cakes that I do like are not the typical birthday-type cake.
My Favorite Cake Recipes
One of my favorite type of cakes is the lava cake. The first time we tried it, I was just amazed. How can just a few ingredients create such a decadent and delicious dessert with that gooey chocolaty center? You've got to try it! It's so yummy served with vanilla ice cream.
Another type of cake I'm partial to is the coffee cake. This caramel nut coffee cake is so stinkin' good. It's got a caramel topping that is baked right on top. It's fantastic!
When we were first married, my husband practically had to force me to try carrot cake. Carrots inside of a cake? I didn't think I would like it. But do you know what? It's really good and I'd take a carrot cake over a box mix cake any day.
Zucchini cake is similar to carrot cake. It's moist and full of flavor.
One of my favorite treats from childhood is this chocolate pudding cake. A chocolatey cake that is a mix between cake and pudding swimming in hot fudge sauce. It seems like it would be a complicated recipe, but it's really pretty easy using everyday ingredients you probably have on hand.
This pumpkin gooey butter cake is one of my favorite desserts. Probably the reason I like it so much is because it's more of a pumpkin bar, than a cake. YUM!
My absolute favorite cake is the angel food cake. I seriously LOVE that stuff. But it has to be home-made. Recently I bought one for a quick strawberry shortcake, and it was re-confirmed to me that homemade is a MUST! Even my son commented that the store-bought wasn't as good.
A new favorite is Guava Cake. I was able to try this at a potluck and knew I needed the recipe. The base is a strawberry cake infused with guava nectar. It's then slathered with a cream cheese mixture and topped with a guava gel glaze that ties it all together. If you want a unique and very pretty dessert that also tastes amazing, you've got to try this cake!
When making homemade cake, a lot of times the cake will stick to the pan. It seems that no matter how much I greased the pan, it would still stick. But not after I learned a little trick to get your cake out of the pan perfectly every time. Go check it out, it's a life-saver!
