When I was young, my mom got me a recipe box and some recipe cards for my birthday. I went to town copying many of her recipes onto my own cards. This banana breakfast is one of those recipes.
I don't remember my mom making this, but after I got married, I found it in my box and tried it. And I REALLY like it.
Banana Breakfast
Every summer I dig it out and make a batch every few weeks. I keep the left overs in the freezer and pull them out as needed.

How to Make Banana Breakfast
The process for this breakfast is pretty simple. Begin by combining milk, bananas and sugar in a blender. Blend until smooth.Pour some grapenuts in 4 small bowls, I like these ones with lids. Pour the banana mixture over the top.
Place in freezer for 20 minutes or until it has started to freeze. Remove and enjoy a refreshing breakfast or snack.
Tip: If you make these ahead of time, it will become completely frozen. That is fine, but makes it harder to eat. I like to pull it out and let it thaw on the counter for awhile. Or I microwave it 20-30 seconds until it thaws slightly.

A light and refreshing banana flavored breakfast perfect for summer time.
Ingredients
- 2 c. milk
- 2 bananas
- 3 t. sugar
- 1 c. grapenuts
Instructions
- In a blender, add milk, bananas and sugar.
- Blend until smooth.
- Pour 1/4 cup of grapenuts into four small bowls.
- Pour banana mixture over the top, dividing evenly between each bowl.
- Freeze for 20 minutes.
- Remove and enjoy!

This looks yummy!! One of my sons is gluten and dairy free and I’m always looking for new recipes to try with him. I assume this could be made with almond milk but any suggestions for a gluten free cereal substitute? Thanks!
ReplyDeleteFor sure you could substitute almond milk. I don't have a lot of experience with gluten free, maybe you could try a gluten free granola in place of the grape nuts. Let us know how it turns out!
