Here's what you need:
1 box brownie mix and ingredients to make the brownies.
1 pkg Andes mint chips
I've seen the brownies with the mint chips spread on top, but I wanted to add a little more mint flavor by adding mint to the brownie too.
To begin pour a cup or so of brownie mix into a small bowl. {No need to measure, you'll be adding it back into the brownie batter in a minute.} Add 1 cup of Andes mint chips. Mix until all the chips are coated with brownie mix. Why should I do that you may ask? Well it helps those little chips to stay put throughout the brownie and not fall to the bottom.
Next make your brownies according the the package instructions. Then add your mint chips into the batter. Remember - you don't want to over stir brownies. Stir only until just combined.
Bake according to box. I like to put them in a 11x7 pan. It makes them a little thicker. Once your brownies are done, sprinkle them with Andes mint chips. Add as many or as little as you prefer. Since the brownies are hot the chocolate will melt and you can spread them evenly over the brownies. For a prettier picture, I let them cool as they fell.
I love the combination of mint and chocolate. This is the perfect Sunday night treat.
