- chocolate cake mix (I like triple chocolate fudge)
- eggs
- oil
- water
- Andes mints or chips
HELPFUL KITCHEN TOOLS
- Glass Mixing Bowls
- Baking Sheets (These are my favorite cookie sheets, the cookies always turn out perfect!)
- Wooden Spoon
MINT CHOCOLATE COOKIES RECIPE
To get the mint flavor, I like to use the Andes mint chips. You can find them near the chocolate chips.It's important to add them right into the dry cake mix first. If you add them after all of the wet ingredients are added, you will find that they don't incorporate well into the batter.

Mint Chocolate Cookies

A soft and chewy mint chocolate cookie topped with a thin layer of mint chocoalte.
Ingredients
- 1 box chocolate cake mix *
- 1 egg
- 1/3 c. oil
- 2 T. water
- 1c. Andes mint chips, plus more for topping **
Instructions
- Stir in one cup of Andes mint chips into the cake mix.
- Add egg, oil and water and stir with a wooden spoon, just until combined.
- Roll into balls the size of walnuts.
- Bake at 350 on a greased cookie sheet for 7-10 minutes.
- As soon as the cookies come out of the oven, immediately place some mint chips on top of each cookie.
- Once the chips have melted, use a knife to spread them over the cookie.
- Remove cookies from pan to cool on a wire rack.
Notes:
*I really like the triple chocolate fudge mix by Betty Crocker, but any chocolate mix will do. **You can use regular Andes mints if you can't find the chips. Just chop them up before adding them to the batter. **You can add 1/2 a mint to each baked cookie to melt instead of using the chips. ***Adding the chips into the dry mix will help them incorporate into the batter better. ***Wrapping the dough around a mint truffle kiss is also yummy!
