It's so yummy and refreshing for summer BBQ's and it's also a great recipe for your Thanksgiving or Christmas table.
You can use fresh fruit in the summertime, and frozen fruit when it's not in season.
RASPBERRY JELLO SALAD (THE BEST FLUFF RECIPE!)
It's a family favorite and my mom will often ask me to bring this to family gatherings. (I usually double the recipe for a group setting.)I hope you enjoy this raspberry fluff Jello salad as much as I do.

INGREDIENTS NEEDED FOR RASPBERRY JELLO SALAD
This recipe uses just a few simple ingredients. I love this salad so much that I always keep the ingredients on hand.
- raspberry gelatin
- tapioca cook and serve pudding
- vanilla cook and serve pudding
- water
- cool whip
- raspberries (or other fruit)
For this recipe to work you need to use cook and serve pudding - for both the tapioca and vanilla.
I use regular jello or sugar-free jello. There is enough sugar in the other ingredients that the difference isn't noticed.
Frozen or fresh raspberries can be used. If using frozen berries, thaw them first.
Be sure to allow the whipped topping to thaw completely as well before making this recipe.
HOW TO MAKE RASPBERRY JELLO FLUFF SALAD
This recipe is easy to make. But it does take some time to allow the jello to set.In a saucepan, add 3 cups water, tapioca and vanilla puddings and jello.
Mix together and bring to a rapid boil.
Chill at least 4 hours. (I've found that chilling overnight is best.)
You can pour the mixture into a glass baking dish and it will set up a bit quicker. But I usually just cover the pot and stick the whole thing in the fridge on a hotpad.
If you are using frozen raspberries, place them in the fridge to thaw while the jello is setting.
Once the gelatin mixture has set, add it along with the raspberries and whipped topping to a large bowl.
Gently combine using a folding technique.
Below I'll illustrate is the difference between chilling times.
This batch I chilled for about 5 hours. The jello mixture was thick, but it wasn't super firm.
The Jello mixture incorporated into the cool whip for a softer smoother texture.
This batch I chilled overnight. The jello had fully set.
Because of this the the jello separated into small little pieces as the cool whip was folded in.
The end result is a stiffer salad with more texture.
Both taste good! So it's a matter of preference and/or time available. I prefer the fully set method.
VARIATIONS OF FLUFF SALAD
It's easy to make different flavors of this jello salad. Simply swap out the flavor of gelatin and the type of fruit you add.Other options include:
- strawberry Jello and sliced strawberries
- strawberry banana Jello and sliced strawberries and bananas
- peach Jello and peaches
- orange Jello and mandarin oranges
You can also add more than one fruit to the salad. Mix and match and create your perfect combination.
